About

Nozawana pickles are an indispensable food in winter for the people in Nagano Prefecture. Nozawana, the mustard family plant, cultivated in Shinetsu region, and salted and fermented, and become pickles. Nozawana pickles are an ideal side dish for a bowl of steamed rice. “Nozawana gohan (rice mixed with chopped nozawana)” flavored with sesame and “Nozawana oyaki (baled bun)” are also delicious. At Nozawa Hot Spring Resort, the origin of the pickles, harvested nozawana are pickled after being cut off the ends of the stems and traditionally washed in the hot-spring water for communal baths like Ogama. This washing process is called “Ona-arai(washing nozawana)”. This method, unique to the hot-spring resort, has been handed down from mothers to the daughters or from mother-in-laws to the daughter-in-laws.
