The prime crabs presented to the Imperial Family
You cannot speak of winter foods in Fukui Prefecture without talking about Echizen-gani (Echizen crabs). Echizen-gani is a male snow crab caught off the Echizen coast. Big ones are more than 50 cm long and appropriately called “the king of crabs” in both appearance and taste. They are quite expensive. Echizen-gani is the only crab, in Japan, presented to the Imperial Family every year. The prime crab is boasted by local people as No. 1 in Japan. The best season is from early November to late March. Fishing ban is lifted on November 6 every year, when fishing ports in Fukui Prefecture such as Echizen and Mikuni are crowded with fishing boats. Crabs fresh from the sea, boiled and chilled with water, are juicy and sweet in your mouth.
