It is said that people of Nagoya eat anything with miso paste. To such extent, there are many local dishes using dark red color miso which was born in Nagoya. “Miso katsu” or large-sized pork cutlet which was breaded and deep-fried, and served with salty sweet miso sauce, is one of the typical foods of a category of such “Nagoya meshi”. It looks heavy at a glance, but when you eat, it is actually plain and mild without particular impact. It also goes well with shredded cabbage, a vegetable relish. If a restaurant gives you sesame and a small earthenware mortar, you can grind sesame by yourself and add it in miso sauce, which will be a good variation for your second bite. Recently, some shops serve you a new version of miso sauce, which is rather similar to western sauce.
