About

Chikuwa is a fish paste applied around a stick which is cooked or steamed. In Aichi prefecture, a product from Toyohashi is famous. The founder family of “Yamasa” shop is a long-established shop with 170-year-old history. Their original business was wholesaler of fish opened near Yoshidajuku or a post town called Yoshida, along former Tokai Highway, and they started to make chikuwa which was sold as specialty for pilgrims who visited Konpira, or a famous shrine in Shikoku. Even now they meticulously choose traditional ingredients such as guchi(drum fish), eso(lizardfish), or hamo(pike eel), and cook those fish and make a fish paste in a factory. The production volume amounts to approximately 200,000 pieces per day. Recently, there are dozens of variations such as a piece made from sea bream, and products with scallop, or sea urchin. In and out of Aichi, you can find many shops where chikuwa baking demonstration sales are available.
