Kamo-suki is sukiyaki with wild duck meat, a specialty in winter from the middle of November to March in Kohoku region (the northern shore of Lake Biwa). Wild ducks, flying from as far as Siberia, stop around Lake Biwa to feed themselves with pickings and fish in the lake. The nutritious and tasty meat has long been precious food for local people during severe winter. Now, hunting is prohibited in the lake. Still, you can enjoy the traditional mallard dishes in the restaurants in Nagahama City. Wild duck has firm texture without unfavorable smell. For Kamo-suki,, loin, breast, or minced duck meat and vegetables are cooked with stock mixed with soy-sauce, sweet sake, and sugar. Other types of wild duck dishes such as Kamo-nabe(wild duck hot pot), Kamo-namba Udon or Soba( Japanese noodles or buckwheat noodles with roasted wild duck) are also served.
