Around Lake Biwa, you will encounter various local dishes of fish from the lake. Biwa-masu, trout endemic to Lake Biwa, is representative fish among those that can be eaten raw. Such dishes as sashimi arranged in the form of the fish, sushi, and fish broiled with salt can be served all year round. Small ayu(sweet fish), gori(a kind of goby), and small shrimp, all having biology peculiar to a lake, are commonly boiled down in the stock mixed with soy-sauce, sweet sake, and sugar, and are popular as a souvenir. Restaurants serve dishes with Koi (carp) such as Koi-koku(miso-soup with chopped carp), sliced raw carp, and carp poached with soy-sauce and sugar. Funa-zushi(sushi with Japanese crucian carp), is Japanese crucian carp peculiar to Lake Biwa, is naturally fermented for a long time and develops strong characteristic smell and flavor.
